HEALTHY HIGH PROTEIN ENERGY BARS (without whey Protein)

INGREDIENTS:
  • Rolled Oats: 100 gms OR 1 Cup
  • Almonds: 1/2 Cup roughly chop
  • Flax Seeds: 2 Tbsp
  • Pumpkin Seeds: 3 Tbsp
  • Sunflower Seeds: 3 Tbsp
  • Sesame Seeds: 3 Tbsp
  • Medjool Dates: 15 soft medjool dates or 350 gms
  • Raisins: 1/2 Cup
  • Peanut Butter: 1/2 Cup
  • Peanuts: 1/2 Cup roasted chop
  • Vanilla Extract: 2 Tsp ( If you don’t like vanilla flavor, you can add 1 Tsp cardamom powder, its optional)
  • Salt: 1/2 Tsp
  • Coconut Oil: 1/2 Tsp
  • Parchment Paper / Aluminum Foil: A single big sheet
DIRECTIONS:
  • Take a deep, thick pan and add Oats in it. On low flame, roast Oats till golden brown color . Take it out and keep it aside in the plate.
  • In the same pan, roast chop almonds slightly on low flame . Take it out and keep aside.
  • Similarly, in the same pan, roast flax seeds lightly and transfer and keep aside. Note, all the above ingredients will be roasted dry only in the pan individually and you can take a big plate and keep all the roasted ingredients next to each other .
  • Now, roast pumpkin seeds lightly and keep aside, then roast sunflower seeds in the same manner, keep aside, then sesame seeds, lightly roast it and keep aside in the same big plate. Allow all the above roasted ingredients to cool down in the dish.
  • Now, take the medjool dates . These medjool dates are particularly used in this protein bar compare to normal dates as these are very soft and easy to use and you can remove the seeds easily. Once you remove the seeds, roughly chop them and put into a blender jar. Add raisins also in the blender and grind it properly. Once its well-blended, add peanut butter into it and blend it again.
  • Transfer the blended paste into a bowl . Mix it well. Then add roasted chop peanuts in it and mix. Also, add Vanilla extract for flavor . Mix all well.
  • Finally, in this grinded paste, add all the above roasted ingredients which you have assembled in the plate earlier. Mix the whole mixture properly. Add very little salt in it and mix all the ingredients with hand only and gather it into a firm dough.
  • Preheat Oven @ 180 degree Celsius. Take a baking tray to bake the protein bars. Lightly grease the baking tray with little coconut oil and grease the sides of the tray also properly .
  • Once the baking tray is greased, place the parchment paper OR Aluminum Foil on it and press it firmly so that paper does not come out. Then, spread the above mixture evenly all over the baking tray . Press it well from all the sides. Once the mixture is intact well into the tray, slice it into your desired shape: Either rectangular or square shape as per your choice.
  • Finally, Bake the protein granola energy bars in the preheated oven which was preset @ 180 degree Celsius. Bake the protein bars for 20 mins or till more time or little less time as you can check in between if it’s done.
  • After 20 mins, once granola bars are nicely baked, allow them to cool down completely. Once its cooled and is at room temperature, use Pizza cutter or any normal knife so that you can loosen up the already sliced bars and the pieces can come out easily . Its ready to serve.
  • Enjoy these high protein bars which are healthy and high energy bars. The shelf life of these protein bars is really good, so you can make them in a large quantity. You can store them in a room temperature up to a month OR you can store them in a refrigerator to last longer.
