Dish of chicken shawarma

INGREDIENTS:

  • Chicken Boneless thigh portion: 150 gm
  • Greek Yogurt: 200gm
  • Onion: 1 Big size
  • Cucumber: 2 Medium size
  • Tomatoes: 2 Medium size
  • Mint Leaves or Parsley: 1 small bunch
  • Maida or All Purpose Flour: 50gm
  • Oil: 1 Tsp
  • Baking Powder: ½ Tsp

Ingredients to Marinate Chicken:

  • Paprika powder: ½ tsp
  • Garlic Powder: ½ tsp
  • Cumin Powder: ½ tsp
  • Turmeric Powder: ½ tsp
  • Red Chilli Powder: ½ tsp
  • Cinnamon Powder: Quarter tsp
  • Black Pepper Powder: 1/22 tsp
  • Salt to taste

Ingredients to prepare Sauce:

  • Salt: ½ tsp
  • Cumin powder: ½ tsp
  • Garlic Powder: ½ tsp

PREPARATIONS:

  • Remove the skin from the chicken thigh piece as it has excess fat, and chop the chicken into 4-5 medium square pieces.
  • Marination: Take a bowl and add 50 gm of Greek yogurt into it. Add all the seasoning into the bowl to marinate the chicken as mentioned above in the ingredients. Add all chicken pieces and mix properly.
  • Baking: You can keep marinated chicken for an hour to settle or you can instantly use it to bake it. Bake all chicken pieces in the oven on a greased baking rack or baking grill for 15-20 mins in preheated oven at 200 degrees Celsius till chicken turns light brown. ( Instead of an oven, you can make the chicken in an air fryer in the same way)
  • For Dough: Take a bowl. Add flour to the bowl. Add salt and baking powder in it and mix well. Add 50 gm of greek yogurt and + little oil and mix the dough properly with your hands till the dough is done. The dough will be slightly sticky, so keep it resting for 5 mins.
  • For Sauce: Dice cucumber+ tomatoes and onions into small square pieces, chop fresh mint leaves, and keep aside. Take a bowl and add 100 gm of greek yogurt to it. Add ½ tsp cumin powder+ ½ tsp garlic powder+ ½ tsp salt and mix it well in the bowl. Also, add diced cucumber, tomatoes, onions, and mint leaves to the bowl and mix.
  • Cooking: Take a non-stick pan and grease it with a dash of oil. Put the dough in the pan and press the dough flat in the pan and keep flipping it and pressing it in the pan till the dough turns into a round shape like chapati and covers almost the entire pan surface. Keep the heat on medium flame and slowly cook the dough bread, flipping it upside down for 3-4 mins till it turns golden brown.
  • Layout of Chicken Shawarma: Take a big plate and keep the Shawarma on the plate. Spread half of the sauce in the middle of the Shawarma, put half the tomatoes, then place entire chicken pieces on top of the tomatoes. Add again the rest of the sauce and the rest of the tomatoes to the Shawarma and roll up the Shawarma tightly. It's Etsy to serve. Enjoy your high protein Chicken Shawarma.
